Resumen

Objective: This study aims to rescue and disseminate the production of "Guineo Paso" in Colombian cuisine, emphasizing its connection to agroecology, ancestral knowledge, and the territorial context of Aracataca and Ciénaga, Magdalena. Theoretical Framework: The research is based on the concepts of territory, agroecology, and ancestral knowledge. Territory is understood as a social and symbolic construction; agroecology as an integrative and sustainable approach; and ancestral knowledge as cultural heritage threatened by economic and political factors. Method: A qualitative research approach was employed, using semi-structured interviews with social leaders, documentary review, and triangulation of analytical and emerging categories. Fieldwork was conducted in 2022- 2023. Results and Discussion: "Guineo Paso" is linked to family farming and agroecological practices, promoting sustainability and the appreciation of local products. However, the expansion of industrial crops has displaced its production. Rescuing it fosters rural development, food security, and cultural identity. Implications: The revaluation of "Guineo Paso" contributes to the local economy, community empowerment, and agroecological transition. Its potential in sustainable business models and solidarity economy is highlighted. Originality: This study combines anthropological and agroecological approaches to address the recovery of a traditional product, emphasizing its role in food sovereignty and sustainability.
